Today, our copywriter, Becky, put on her pinny and baked banana bread. As a bit of a baking novice, she found a very simple recipe from called 'easy banana cake'. She wasn't taking any chances.... Here's what you need and how to do it if you fancy giving it a go.

What you need:

125g butter

150 g caster sugar

1 tsp vanilla extract

1 egg, beaten

2 very ripe bananas, mashed

190g self-raising flour

60ml milk


How you do it:

Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat.

Remove from the heat and add the mashed bananas, mix well.

Stir in the flour and the milk.

Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunchy topping (if you like - Becky did).

Bake at 150C fan oven (or 170C regular, gas mark 3) for 35 minutes, until a skewer comes out clean. Leave to cool and enjoy with a cup of tea.
